Kulit Biji Kopi Sebagai Antioksidan »

Kopi merupakan salah satu komoditi makanan yang sangat penting didunia dan menempati urutan kedua setelah crude oil.  Tanaman ini biasanya dapat tumbuh di daerah tropikal dan subtropikal. Ada sekitar 60 negara sebagai penghasil kopi di dunia dan Indonesia menempati urutan keempat sebagai penghasil kopi terbanyak di dunia dengan produksi pertahunnya mencapai 686.763 ton (tahun 2007) . Di Indonesia terdapat dua jenis kopi yang terkenal yaitu jenis arabika (coffee arabica) dan Robusta (Coffee canephora). Perbedaan antara kedua jenis kopi ini adalah terletak pada rasa, daerah tumbuh dan kandungan kafeinnya. Kopi Arabika biasanya ditanam pada daerah dataran tinggi sedangkan kopi Robusta biasanya ditanam pada daerah dataran rendah. Kopi Robusta biasanya dikatakan kopi kelas dua karna memiliki rasa yang lebih pahit, kandungan kafeein yang tinggi dan rasanya sedikit asam tetapi kopi ini lebih tahan terhadap serangan hama dan penyakit. Sedangkan, kopi Arabika adalah jenis kopi nomor satu dimana kandungan kafeinnya lebih rendah dan tidak ada rasa asamnya.

            Dipihak lain, dapat tumbuhnya tanaman kopi juga dipengaruhi oleh keadaan iklim daerah tersebut dimana antara kopi Arabika dan Robusta memiliki tipe iklim yang berbeda untuk  pertumbuhannya. Persyaratan iklim untuk kopi Arabika adalah memiliki garis lintang 6-9oLU sampai 24 oLS, tinggi tempat penanaman adalah 1250 sampai 1850 m dpl, curah hujan 1500 sampai 2500 mm/tahun dan suhu udara rata-rata 17 – 21 oC. Sedangkan persyaratan iklim untuk kopi Robusta adalah memiliki garis lintang 20 oLS sampai 20 oLU, tinggi tempat penanaman adalah 300 sampai 1500 m dpl, curah hujan 1500 sampai 2500 mm/tahun dan suhu rata-rata adalah 21 – 24 oC .

Kopi merupakan tanaman tahunan dengan pohon berbentuk semak tegak dengan tinggi antara 2 sampai 5 m. Pada pohon tersebut terdapat batang-batang yang agak tipis, tegak dan berjumbai. Daunnya berbetuk oval dengan panjang 10 sampai 15 cm dan lebarnya 4 sampai 6 cm. Warna daunnya adalah hijau tua dengan sedikit berkerut dipermukaannya. Pohon kopi mulai berbuah 5 sampai 7 tahun setelah ditanam. Buah kopi memiliki permukaan yang licin dan kulit buah ini keras. Biasanya buah muda berwarna hijau tetapi berubah menjadi merah saat masak.  Bentuk tanaman kopi dapat dilihat pada gambar 1 berikut

              Dalam pemanfaatannya, bagian kopi yang digunakan adalah biji kopinya. Biji ini biasanya diolah sehingga nantinya akan bisa dikonsumsi secara langsung oleh manusia sebagai minuman. Bentuk olahan tersebut biasanya berbentuk seperti bubuk agar mudah dijual atau diekspor. Proses pengolahan biji kopi ini dapat dibagi menjadi dua jenis yaitu proses kering dan proses basah.  Pada proses kering, biji kopi yang telah dipanen kemudian dikeringkan dibawah sinar matahari selanjutnya secara mekanik biji kopi bisa dipisahkan dari kulit dan daging buahnya. Untuk proses basah, buah direndam didalam air dan nanti akan buah akan mengalami kerusakkan sehingga biji bisa terpisah dari kulit dan daging buah.

Dalam proses pengolahan buah kopi menjadi suatu bahan makanan yang akan dikonsumsi seperti minuman kopi, bagian buah yang diambil adalah biji kopinya. Sebagai mana diketahui buah kopi memiliki beberapa bagian seperti yang dapat kita lihat pada gambar 2.

Biji kopi diolah sedemikian rupa sehingga nantinya dapat dimanfaatkan untuk dikonsumsi oleh manusia.  Pada proses tersebut ada bagian buah yang dibuang yaitu pulp (bagian  mesocarp), skin (bagian eksokarp),mucilage dan parchment (bagian endocarp) dan bagian-bagian tersebut dapat kita lihat pada gambar 2 dimana mereka dapat disebut dengan limbah kulit biji kopi  yang biasanya dibuang dimana dari total berat buah kopi yang diolah menjadi biji kopi sekitar 40 – 45 % dihasilkan kulit biji kopi. Di indonesia sendiri pemanfaatan limbah ini hanya sebagai pakan ternak atau diolah sehingga bisa digunakan menjadi pupuk bagi tanaman.

            Komposisi penyusun dari skin, pulp, parchment adalah karbohidrat (35%), protein (5,2%), fiber (30,8%) dan mineral (10,7%) sedangkan bagian mucilage mengandung air (84,2%), protein (8,9%), gula (4,1 %) dan abu (0,7%). Selain itu, limbah kulit biji kopi ini juga mengandung beberapa senyawa metabolit sekunder yaitu seperti dari kafein dan golongan polifenol. Dari beberapa penelitian, senyawa polifenol yang ada pada limbah ini adalah flavan-3-ol, asam hidroksinamat, flavonol, antosianidin, katekin, epikatekin, rutin,tanin, asam ferulat (Esquivel, P &Jimenez V.M.2011).

            Polifenol dapat diartikan suatu senyawa kimia yang umumnya terdapat pada bahan alam dimana struktur dasarnya memiliki gugus aromatic yang terikat satu atau lebih gugus OH. Senyawa ini telah menjadi pusat perhatian oleh para ilmuwan karena memiliki banyak manfaat bagi kesehatan

yaitu dia mampu mencegah atau mengobati penyakit degenerative yang kronik seperti kanker, diabetes, penyumbatan pembuluh darah, dan penyakit neurodegenerative. Selain itu, polifenol juga terkenal kemampuannya sebagai antioksidan. Sifat antioksidan senyawa ini berkaitan dengan keberadaan gugus fenolik yang dikandungnya yang dapat mendonorkan atom hidrogen pada suatu radikal bebas sehingga tidak lagi bersifat reaktif.

             Antioksidan dapat diartikan sebagai suatu senyawa yang memiliki kemampuan melindungi sel dari efek berbahaya radikal bebas oksigen reaktif dengan cara menghambat terjadinya suatu oksidasi yaitu bereaksi dengan radikal bebas yang reaktif sehingga membentuk radikal bebas tak reaktif..

Saat ini ditemukan bahwa ternyata radikal bebas berperan dalam terjadinya berbagai penyakit. Hal ini disebabkan karena radikal bebas adalah spesi kimia yang memiliki elektron tunggal bebas di kulit terluar sehingga sangat reaktif dan mampu bereaksi dengan protein, lipid, karbohidrat atau DNA. Reaksi antara radikal bebas dengan molekul tersebut berujung pada timbulnya suatu penyakit. Radikal bebas atau oksigen reaktif dapat menyebabkan penuaan dini, memicu terjadinya kanker, meningkatkan kadar LDL (Low Density Lipoprotein) yang dapat menyebabkan penimbunan kolesterol pada dinding pembuluh darah sehingga dapat menimbulkan penyakit jantung koroner.

            Seperti yang telah disebutkan sebelumnya, kandungan metabolit sekunder yang dominan pada kulit biji kopi adalah senyawa polifenol. Sehingga ;imbah ini dapat dikatakan berpotensi sebagai antioksidan yang cukup baik.

Pekerjaan kerjakanlah

Pekerjaan, usaha, profesi adalah anugerah bagi kita, manusia di bawah kolong langit. Kita dicipta untuk menerima tanggung-jawab itu. Maka kita perlu terus bukan hanya bekerja keras dan cerdas, berbisnis cerdik dan berhikmat, atau menjalani profesi dengan tekun dan tulus, melainkan menikmati kesemuanya itu, sehingga  kegembiraan terus dialami. Jangan biarkan pekerjaan, usaha, atau profesi membebani hidupmu. Pun jangan biarkan itu semua merebutmu dari orang-orang yang kau cintai dan mencintaimu, atau dari hal-hal yang kau senangi dan menyegarkanmu. Jangan juga biarkan itu semua membelenggu, apalagi membuat dirimu sedih dan kehilangan semangat untuk hidup. Seperti kata sang Pengkhotbah: "Segala sesuatu yang dijumpai tanganmu untuk dikerjakan, kerjakanlah itu sekuat tenaga, karena tak ada pekerjaan, pertimbangan, pengetahuan dan hikmat dalam dunia orang mati, ke mana engkau akan pergi. Kiyosaki rata-rata orang kaya memperoleh 70% dari sisi kanan Cashflow Quadrant plus 30% dari sisi kiri. Tidak peduli berapa banyak uang yang dihasilkan seseorang, mereka akan merasa lebih aman jika beroperasi di lebih dari satu kuadran. Keamanan financial berarti mempunyai pijakan yang kuat di kedua sisi Cashflow Quadrant. Jalan yang disarankan oleh Robert T. Kiyosaki baik dari E ataupun S lebih baik orang masuk ke B lebih dahulu karena pengalaman dan pendidikan. Jika sukses sebagai seorang B maka kita akan mendapatkan kesempatan menjadi I yang kuat, karena I akan menambah uangnya di B karena sudah pernah menjadi B maka kita bisa mengenali B yang lain yang lebih bagus. Sangat beresiko berinvestasi pada seorang E atau S yang tidak mengetahui perbedaan antara sebuah sistem dengan produk atau yang tidak mempunyai keterampilan kepemimpinan yang baik.

Kenapa menjadi B lebih dahulu? Pertama karena pendidikan dan kedua karena Cashflow. Jika memiliki bisnis yang berjalan dengan baik maka kita akan mempunyai waktu luang dan uang untuk berinvestasi di kuadaran I dengan baik.

Andai aku PING dan kau jawab PONG, bukan RTO...

beberapa minggu ini berkutat dengan urusan PING dan RTO. sang klien ngotot harus bisa mendeteksi RTO (request time out) alias tidak responnya jaringan apabila paket PING dikirimkan.

Seringkali kita seperti ini, mengirimkan sinyal PING, tapi malah RTO yang kita dapat. Tidak mendapat jawaban yang kita inginkan, melainkan berlalu dan tidak ada tanggapan apa-apa.

Tapi ada TRACEROUTE yang digunakan untuk mendeteksi, kenapa dan dimana paket PING ini putus dan terhilang. Traceroute akan mencoba menelaah, tahap demi tahap, dan dimana informasi ini hilang dan terbuang.

Ini juga dalam keseharian kita. Kita harus bisa melakukan TRACEROUTE terhadap apa yang kita sudah sampaikan, tapi tidak ditanggapi, tidak didengar, dan mungkin dianggap angin lalu saja.

Lalu apa ? setelah tahu dimana problemnya, kendalanya, komunikasikan, sampaikan kembali 'ping' selanjutnya, dan sampaikan kita ingin jawaban 'pong' itu.

Penting nya kemudahan gunakan NMS

The Network Operation Center (NOC) interacts with the Network through the User Interface of various Network Management Systems (NMS). Thus, the importance of theUser Interface cannot be underestimated as it can simplify the daily work of NOC operators and help minimize costs by allowing faster network roll-out, identification and restoration of network and service issues.

This article identifies and analyzes the characteristics that make a User Interface provide a better user experience to increase the efficiency and effectiveness of the NOC.

Drag n' Drop

A Network Management System (NMS) must feature a drag 'n drop user interface, where the user can re-arrange the network model with simple actions, using the network tree view or map topology view. With simple drag n' drop actions, the user must be able to:

Add managed devices to domains and sub-networks.

Add sub-networks to domains.

Transfer domains under domains, creating hierarchical structures.

Transfer managed devices from domain to domain.

A Network Management System (NMS) must feature atabbed user interface that helps users manage the way they browse their system reports, inclusive of reports for domains, managed elements, physical terminations, performance, faults, configuration, etc.

Users must be able to drag 'n drop tabs in and out of the main window in order to make them independent windows, thus supporting the usage of video walls in NOC premises.

 

Context Sensitive Menus

A Network Management System (NMS) must feature a click n' go user interface that is implemented through the utility of Context Sensitive Menus. These menus must appear when the user right-clicks anywhere on the User Interface, including:

A managed object in the Network Navigator.

A module / port in the Topology (Graphical View).

A record (e.g. an alarm or a performance measurement) in

a tabular report.

 

The context-sensitive menu that appears must provide options adapted to the selection the user has made. Using a context-sensitive menu, on the selected entity, the user must be able to carry out network configuration, monitoring, performance analysis, etc. with a one-click action.

 

Real Time Updates

A Network Management System (NMS) must feature real-time updates of the user interface with user-customizable update frequency. This automation minimizes the number of clicks required for monitoring and allows the real-time monitoring of events, faults and performance of the network.

 

Visualization on Maps

A Network Management System (NMS) must feature the capability to allow users to create geographical and administrative domains in order to group discovered devices and also create the connections and links between these managed devices. In this way, the network topology can bevisualized, greatly increasing the NOC capability to monitor the status and performance of the managed network and its elements.

With the Google maps service available to everyone for free, users have been educated to use mapping features such as zoom-in / zoom-out and drill-in / drill-out, and expect to find them also in the User Interface of the NMS.

Thus, visualizing the topology is only the first step. User Interfaces must display on Google maps the status and performance of the network color-coded, to provide the NOC user a new level of visualization .

Photo-realistic Equipment Views

A Network Management System (NMS) must feature photorealistic equipment views that are "live" in the sense that they display the alarm, operational and administrative status of the managed devices in real-time.

In such photorealistic equipment views, alarms can be represented with colored rectangles:

The rectangle's outline color to indicate the severity of the alarms, which exist in this object.A blinking outline to indicate the existence of unacknowledged alarms in this module or port.

 

Customization & Personalization

A Network Management System (NMS) must feature the capability to:

Fully customize the viewing workspace (desktop) at run time.

Display multiple reports (e.g. Inventory / Status / Alarms / Configuration / Performance) in one screen, synchronized.

Customize the menus to add new reports and navigators that give quick access to network domains.

The Network Management System (NMS) must feature the capability to make the above changes personal, i.e. apply them only to a selected user.

21 cara mencapai kesuksesan dan kekayaan

In his book, Rich Habits -- The Daily Success Habits of Wealthy Individuals, Tom Corley outlines several habits that distinguish the wealthy from the nonwealthy. 

It got me to think, How many people operate on autopilot and don’t stop to monitor their everyday patterns? Below I've summarized 19 of his habits for success (nine culled from his book and the next 10 from his recent article in Success) plus two of my own. If you're not actively engaged in these 21 things, you are, in effect, leaving money on the table.

1. Setting good daily habits.

Good habits are the foundation of wealth building. The difference between successful and unsuccessful people lies in their daily habits. Simply put, successful people have many good habits and few bad ones. If you understand that your bad habits may be preventing you from becoming wealthy, that realization will be the first step in your improving your circumstances.

In his book, Corley invites you to take out a sheet of paper and list your bad habits in one column and then invert each one to place under a new column for good habits. It should look like this:

I watch too much TV.             I limit myself to one hour of TV per day. 

I don’t remember names.     I write down names and remember them. 

Then for 30 days, follow the guidance of your new good habits list. You’ll be amazed at how much you can accomplish. 

2. Regularly creating goals.

Successful people are goal driven. They create goals all the time. They plan their day the night before with to-do lists.

People who are headed for success think for the long term. They have daily, weekly, monthly and yearly goals. But what’s a goal without a plan to reach them? So not only do successful people have goals, they also come up with ways to achieve them and hold themselves accountable. 

3. Engaging in self-improvement daily.

Successful people are always looking for ways to improve themselves. They read every day and are students of their profession. They don’t spend their time on activities that don't bring them closer to their goals.

I recently attended an event hosted by author Brendon Burchard, who said he consistently blocks out time to create. Successful people like Burchard know that time is too valuable a commodity to waste. They spend their time on the things that will move the needle for them in their business: Being committed to self-improvement means you engage in activities every day that will stretch you.

Seek ways to expand your knowledge. This won’t always be easy, but people grow from things that pose a challenge. Once your knowledge grows, opportunities appear.

4. Regularly taking care of personal health.

Each and every day successful people make an effort to eat right and exercise. Eating right is of utmost importance. Exercising daily can become a regular habit, just like taking a bath. People who exercise routinely have more energy to get things done. How are you doing in this area? 

5. Often making time for relationship building.

People who are successful are other-people focused. They take time out of their day to strengthen the bonds of friendship and form long-lasting relationships with others. Networking is something they do all the time. They reach out to their contacts and look for ways to help them with no expectation of in return.

The most beautiful sound on Earth, I once heard someone say, is your name. So make it a goal to learn the names of every contact you meet. Aren’t you impressed when someone remembers your name? I know I am. So stand out as different and start remembering names. 

6. Doing things in moderation.

You live in a balanced way if you do activities in moderation. This means having a balanced approach to work, eating, exercise, consuming alcohol, watching television, surfing the Internet and so forth. As a result, people will enjoy your company. If people like being around you, then you will be more apt to collaborate or find the new business partner that you need to take your business to the next level.

7. Getting things done.

Don’t put off to tomorrow what you can do today: Accomplish things. All people have fears, but successful people push past them. They don't procrastinate. They get the important things done, no matter the cost.

In Rich Habits, Corley explains that when the thought of putting off something enters the mind, immediately shed notion by saying, “Do it now.” He says repeat these words 100 times if necessary. Just don’t stop till the task is done. 

8. Keeping a positive outlook.

Consider the most successful person you know. Is that person positive or negative? Most likely this individual is positive, enthusiastic, energetic and happy. This person chooses to see the good in others and in himself or herself. To this person, problems are just opportunities waiting to be uncovered.

Every day people are bombarded by news of bad deeds and doings. Successful people minimize their exposure to this type of thing and instead opt to fill their minds with positive ideas from books and magazines. 

9. Regularly saving money. 

According to Corley, successful individuals put away about 10 percent to 20 percent of their gross earnings in a savings, investment or retirement plan. Not everyone can afford to do so, but what percent are you putting away?

10. Rejecting self-limiting thoughts. 

Successful people command their thoughts and emotions. As soon as bad thoughts intrude, they cast out anything that challenges their ability to succeed at the task at hand. They do not dwell on negative notions. Their self-talk is positive and not overly critical. They replace bad thoughts with good ones.

Because successful people engage in self-improvement daily and are constantly involved in positive things, they don’t allow themselves time to indulge in negative emotions. 

11. Living within means.

Wealthy people avoid overspending. Among many of those struggling financially, some are living above their means. They spend more than they earn, live from paycheck to paycheck and are drowning in credit-card debt. If this is you, resolve today to turn things around for you and your family. 

12. Reading daily. 

Many successful people read 30 minutes or more every day. Reading can increase your knowledge and know-how. When you read, often  you are seeking to improve yourself. This automatically sets you apart from your counterparts. You will stand out from the competition. 

13. Limiting TV watching. 

Did you know that many successful  people limit the amount their TV time to one hour or less a day? How much time do you lose in front of the television that you could be spending doing something more productive? 

14. Doing more than what’s required.

Successful people regularly go above and beyond the call of duty at work. Even if something is not in their job description, they will volunteer to do it. Wealthy people make themselves invaluable. As an entrepreneur, you may not have a boss. But in what ways do you go above and beyond for your clients? How do you wow them?

15. Talking less and listening more. 

When you listen, you learn. And as the adage goes, that’s why people have two ears and one mouth. When you take the time to really pay attention to what another person is saying, it can truly help not only you but your bottom line as well. When you listen, you are in a better position to help others. 

16. Not giving up.

Don't give up when the going gets tough. Successful people hang in there. They pivot. They try something new. They persist. They may have to change their direction, but they keep moving forward. 

17. Spending time with like-minded ones. 

There's a saying that goes, “Show me who your friends are and I’ll show you who you are.” I believe that. People are only as successful as those they choose to surround themselves with. Good associations can help you more quickly achieve your goals.

18. Finding a mentor.

Many people who have had a mentor have attributed their success to that person. Mentors can help you achieve your goals faster and keep you accountable. They can share valuable experience that can cut your learning time in half.

19. Knowing your why.

When you know why you're doing something, you will get what you want quicker than if you don’t. Having a purpose is essential to being successful in business and in life. Why do you want to be successful? Why do you really want to be wealthy? 

20. Not giving fear the upper hand. 

Everyone has fears. Successful people don’t allow their fears to limit or define them. Fear inevitably keeps you in the same position and stunts your growth. Recognize your fears and seek ways to overcome them. Interview someone you admire and ask that person how he or she overcame a fear or pick up an autobiography and take notes. 

21. Upgrading skills. 

If you want to get ahead, there’s only one way to do it: Become better at something than you are today. What's the one thing you can focus on for the next 30 days that will catapult you to rock-star status in your industry? Focus your attention on that. I heard John Lee Dumas from Entrepreneur on Fire define "FOCUS" like this: Follow one course until success. Will you?
